From a young age we all have memories of family, friends, and food. The two go hand in hand.

My first memories associated with food are standing on a chair in the kitchen with my gram, Alice Marie. We used to make all kinds of things - apple pies, lemon meringue pies, chocolate and butterscotch pudding tarts, angel food cake with cream and fresh berries, tons and tons of cookies, and chocolate confections around Christmas.

Alice Marie is designed to be approachable, whole food, from scratch baking with a strong emphasis on appealing to the nostalgia of childhood. 

Our menu offerings include a lot of my favourite bakes with gram.

Rachelle Cornish - co-owner/pastry chef

Rachelle is the baker and flavour obsessed creative behind Alice Marie. Passionate about food, she takes a keen interest in sourcing local seasonal produce and in finding quality ingredients that elevate childhood favourites. 

She learned the ins and outs of organic French baking, pastry, and traditional bread making at Fol Epi in Victoria, BC. Developing a passion for the art of viennoiserie, wood-fired ovens and classic french pastries - she then moved down under to work as Head Pastry at Tivoli Road Bakery in Melbourne, Australia, followed by time on the Research and Development team (pastry & bread) for LK Hospitality’s Omnia Bistro and Capitol Grand. 

Returning to Canada, Rachelle was Head Pastry Chef for local favourite Cold Comfort before returning to Toronto as Pastry Chef for White Lily Diner in Leslieville. 

At White Lily, she’s had the opportunity to work extensively with their locally grown farm produce and launched Alice Marie pop-up events in 2023.

Aaron is the smiling face that keeps the Alice Marie baking train on time. Working in kitchens from the age of 18, he’s a multitalented savoury chef, restaurant manager, barista, and passionate foodie with a soft spot for Italian food. 

A certified VPN Pizzaiolo, Aaron perfected his Neapolitan wood-fired pizza skills at Cotto Enoteca in Vancouver, before becoming Head Chef then General Manager at Prima Strada in Victoria, BC. 

Moving to Melbourne gave him the opportunity to work in fine dining as a chef at Neil Perry’s Rockpool, followed by the Mulberry Restaurant Group’s Hazel. 

Returning to Canada, he’s taken on roles at Pilot Coffee Roasters and Boxcar Social while diving into his own passion project as a musician and music producer. You’re likely to find him bopping to beats and drumming on the counter as he manages the coffee side of Alice Marie. He wears many hats - managing operations, front of house & wholesale orders.
